It is a purely Romanian soup that I prepare with the greatest pleasure in the cold season, after the holidays, when the cabbage juice reaches its maximum taste. Smoked potato soup and cabbage juice is so tasty that we will not be afraid to serve it at family Sunday meals and even if we have guests.
First, 2-3 hours before preparing the soup, we put the smoked ribs in cold water in the evening, after washing them well under a stream of cold water.
After the smoked ribs have melted, we prepare the vegetables and keep the potatoes in cold water so that they do not oxidize.
We do the same with onions, after cleaning it we keep it in water for 10 minutes, so that we don't cry when we chop it finely.
We use a very tasty cabbage juice to get a very good taste for smoked potato soup.
Strain the cabbage juice through the thick tea strainer into a saucepan in which we will boil it separately.
